What it is and what it does
Sodium Nitrite is a chemical preservative that is added to meat (and fish). It prevents the growth of botulism causing bacteria and makes meats’ color more pink, aka appealing . It has been linked to migraines, and repeated consumption of cured meats has been linked to the COPD form of lung disease. When nitrites are consumed with animes (natural breakdown products of proteins), nitrosamines are formed. The Linus Pauling Institute states ‘an enormous amount of indirect evidence indicates that nitrosamines are human carcinogens.’ Food labels will not warn of the ingredient Sodium Nitrite.

cured meats and fish: bacon, sausages, deli/lunch meats, ham, hot dogs, pepperoni
