Somehow, tomorrow is the first of October. How that’s happening, I’m not sure. It seems like summer just began here in the Pacific Northwest. It’s been a beautiful two months, and I’m telling myself to welcome autumn with open arms. While I put on my fall jacket to go to dinner tonight, I accepted the beginning of the cool, crisp season. A few days late.
And I thought I’d rally together a list of favorite recipes from around hyperspace. They might make these now cooler days a bit warmer. They’re all family friendly and low-maintenance. I hope you enjoy them too.
Michelle’s Rawtella Recipe
This guilt-free version of Nutella makes me happy. I add a blended frozen banana to make ice cream, or just drizzle some on top of banana slices.
Shaina’s Quinoa, Clementine and Pomegranate Salad stuffed in lil squash recipe, over at Food Your Way
This salad is fruity protein goodness, and a hit for a potluck.
Elana’s Homemade Apple Sauce Recipe
I haven’t actually tried making applesauce this way yet, but I can’t wait to. It’s an all bake, no boil method. Brilliant. I can almost smell the deliciousness of baking apples.
Heidi’s Skinny Omelette Recipe
On the right days, I make these for breakfast and lunch. I love the versatility and guilt-free sustenance. I like to stuff mine with fresh spinach, goat cheese, tomato slices, avocado and anything I have on hand.
Marla’s Balsamic Grilled Vegetables Recipe
This simple recipe for my favorite vegetables has been a favorite. When I can’t face a salad or raw veggie, this is the go to.
Katie’s Coconut Flour Pancake Recipe
I can never turn down applesauce pancakes. I add cinnamon to these and think of them as apple cinnamon roll cakes.
Elana’s Chocolate Almond Joy Bars
These are my go to dessert. They’re a household favorite and gone in no time.
Ree’s Crash Hot Potatoes Recipe
We’re potato crazed people, maybe it’s in our German blood. These are simple and gourmet, and a welcomed change of pace from fries. A handful of fresh baby potatoes was made for these.
